Vinification

Whole grapes in Co2 saturation for 9 days, held in small pvc containers and then crushed and pressed. The must completes the fermentation in cement and fibreglass tanks. The last harvests of riper grapes ferment on the skins for 5 days before the pressing. The mass is incorporated at the end of winter with bottling taking place in June.
