A white wine born out of a long maceration of Trebbiano grapes, offering the right extraction and aromatic complexity to a rather neutral and ethereal grape variety.

The nose reveals peppery, spicy notes with a tinge of dry flowers. An enveloping palate, with just the right edge.

No systemic treatment. Copper, sulphur, kaoline and/or zeolite, according to the seasonal developments. Fertilised with self produced vegetal compost and, occasionally, with manure. Soil surface treatments aimed to fight compaction and bury the fertilisation.

Vinification

Whole cluster maceration in Co2 saturation for 8 days, followed by an aerobic fermentation on the skins for 12 days, in small pvc containers of 10 hl. 30% of the mass completes the fermentation and ages in oak tonneau, while the remaining 70% ferments in stainless teal. The due masses come together during spring, while the bottling takes place in May.
