A pure Grechetto leaning towards a more genuine and dynamic expression, rather than the classical one, where the balance between its freshness and its tannicity work to enhance its structure. Exuberant taste, with citrus notes and candied fruit. Very gourmet.

No systemic treatment. Copper, sulphur, kaoline and/or zeolite, according to the seasonal developments. Fertilised with self produced vegetal compost and, occasionally, with manure. Soil surface treatments aimed to fight compaction and bury the fertilisation.

Vinification

Pressing of the de-stemmed and partially crushed grapes, followed by a 12 hours long settling of the must in stainless steel vats and fermentation in large oak barrels. The wine will never be racked and shall refine on the lees until next autumn, to coincide with the bottling process.
